Steffan Igor Ayora-Diaz proposes tolook at ‘the emergence of regionalcuisines as a strategy to defend heterogeneity against the homogenizing power of nationalist ideologies’. Through three-hundred highly documented pages, he illustrates the originality and particularities of Yucatecan cuisine in contrast to Mexican nationalcuisine. He also analyses its link toidentity as well as the transformations it is going through at the crossroads between the local and the global and the private and public spheres.
